1 lb ground beef or ground turkey

1 medium onion, finely chopped

1 medium green bell pepper, finely chopped

2 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 teaspoon soy sauce

1 teaspoon Dijon mustard

1/2 teaspoon black pepper

1 cup sliced mushrooms (optional)

1 cup shredded provolone cheese (or American cheese)

4 hamburger buns

Salt to taste

Olive oil for cooking

Cook the Meat: In a large skillet, heat a splash of olive oil over medium heat. Add the ground meat, breaking it up with a spatula. Cook until browned, about 5-7 minutes. Season with salt and black pepper.

    Sauté Vegetables: Add the chopped onion, bell pepper, and mushrooms (if using) to the skillet. Cook until the vegetables are tender, about 5 minutes. Add in the minced garlic and cook for an additional minute until fragrant.

      Mix in Sauces: Stir in the Worcestershire sauce, soy sauce, and Dijon mustard. Mix thoroughly to combine and let it simmer for 2-3 minutes to enhance the flavors. Taste and adjust salt if needed.

        Add Cheese: Sprinkle the shredded provolone cheese over the mixture, cover the skillet, and turn the heat to low. Allow the cheese to melt for about 2-3 minutes, stirring gently to incorporate it into the meat mixture.

          Prepare the Buns: Meanwhile, slice the hamburger buns in half. You can toast them lightly on a skillet or under the broiler if desired.

            Assemble: Spoon generous amounts of the cheesy meat mixture onto the bottom half of each toasted bun. Top with the other half of the bun.
