1 ripe peach, finely chopped

1 cup heavy cream

2 tablespoons powdered sugar

1/2 teaspoon vanilla extract

1/2 cup cream cheese, softened

1 tablespoon lemon juice

1 teaspoon peach preserves (optional)

1/4 cup granola or crushed cookies (for layering)

Fresh mint leaves (for garnish)

Instructions
 

Prepare the Peach Mousse:

    - In a medium mixing bowl, beat the cream cheese until smooth.

      - Add powdered sugar, vanilla extract, and lemon juice to the cream cheese, mixing until well combined.

        - In a separate bowl, whip the heavy cream to soft peaks. Gradually fold the whipped cream into the cream cheese mixture until smooth and creamy.

          - Gently fold in the chopped ripe peach and peach preserves, if using, to add extra flavor. Set aside.

            Assemble the Trifle:

              - In two small glasses or serving bowls, start by layering a spoonful of granola or crushed cookies at the bottom.

                - Next, add a generous layer of the peach mousse, smoothing it out with the back of a spoon.

                  - Repeat the layers: another portion of granola or cookie crumbs followed by more mousse, finishing with a dollop of the mousse on top.

                    Chill and Serve:

                      - Place the assembled trifles in the refrigerator and allow them to chill for at least 30 minutes to firm up.
