2 ripe peaches, diced

1 tablespoon lemon juice

1 tablespoon honey

½ cup heavy cream

2 tablespoons powdered sugar

½ teaspoon vanilla extract

1 cup vanilla yogurt

4 small ladyfinger cookies, crumbled

Fresh mint leaves for garnish

Prepare the Peaches: In a small bowl, mix the diced peaches with lemon juice and honey. Set aside to marinate for about 10 minutes, allowing the flavors to meld.

    Make the Mousse: In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract while continuing to whip until stiff peaks form.

      Fold in Yogurt: Gently fold in the vanilla yogurt to the whipped cream until well combined and fluffy.

        Assemble the Trifle: In two small dessert glasses, layer half of the crumbled ladyfinger cookies at the bottom. Next, add a layer of the peach mixture, followed by a layer of the peach mousse. Repeat the layers until the glasses are filled.

          Chill: Cover the trifles with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld and the mousse to set.

            Garnish and Serve: Just before serving, garnish the trifles with fresh mint leaves and a few extra pieces of diced peaches, if desired.
