Ingredients
  

1 cup dried split green peas (rinsed)

1 tablespoon olive oil

1 medium onion (chopped)

2 cloves garlic (minced)

2 medium carrots (diced)

2 celery stalks (diced)

1 bay leaf

1 teaspoon thyme (dried)

6 cups vegetable or chicken broth

1 cup cooked ham (diced)

Salt and pepper to taste

Fresh parsley (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes translucent.

    Add the minced garlic, diced carrots, and diced celery to the pot. Cook for another 5-7 minutes, stirring occasionally until the vegetables are softened.

      Stir in the rinsed split peas, bay leaf, and thyme. Mix well to combine all the ingredients.

        Pour in the vegetable or chicken broth, and bring the mixture to a boil.

          Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 30-40 minutes, or until the peas are soft and starting to break down.

            Remove the bay leaf and add the diced cooked ham to the soup. Stir well and let it simmer for an additional 10 minutes.

              Season with salt and pepper to taste. If the soup is too thick, feel free to add a bit more broth or water to reach your desired consistency.

                Serve the soup hot, garnished with fresh parsley for a touch of color and added flavor. Enjoy!
