2 boneless, skinless chicken breasts

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup sun-dried tomatoes, chopped

2 cups chicken broth

1 cup heavy cream

8 ounces penne pasta

1 cup spinach, fresh

1 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions
 

Sear the Chicken: In a large pot or skillet, heat the olive oil over medium-high heat. Season the chicken breasts with Italian seasoning, salt, and pepper. Add the chicken to the pot and sear for about 5-6 minutes on each side until golden brown. Remove the chicken and set aside.

    Sauté the Garlic & Tomatoes: In the same pot, add the minced garlic and sauté for 1-2 minutes until fragrant. Add the chopped sun-dried tomatoes and cook for another minute.

      Combine Ingredients: Pour in the chicken broth and heavy cream, then stir to combine. Bring the mixture to a simmer and add the penne pasta. Stir well to ensure the pasta is submerged in the liquid.

        Cook the Pasta: Place the seared chicken breasts back into the pot. Cover and cook on medium heat for about 15-18 minutes, or until the pasta is al dente and the chicken is cooked through (internal temperature should reach 165°F/74°C).

          Finish & Serve: Once cooked, remove the chicken, slice it, and return it to the pot. Stir in the fresh spinach and Parmesan cheese until the spinach wilts and the cheese melts. Taste and adjust seasoning if necessary.

            Garnish and Enjoy: Serve the pasta in bowls, garnished with fresh basil leaves and a sprinkle of extra Parmesan if desired!
