12 oz (340g) spaghetti or fettuccine

4 cups fresh spinach, roughly chopped

4 cups vegetable broth

1 medium onion, diced

4 cloves garlic, minced

1 medium lemon (zest and juice)

1/2 cup heavy cream (or coconut cream for a vegan option)

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

2 tablespoons olive oil

1 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for another minute until fragrant.

    Combine Ingredients: Add in the vegetable broth and bring to a boil. Once boiling, add the spaghetti (or fettuccine) to the pot and reduce the heat to a simmer.

      Cook Pasta: Stir frequently, ensuring the pasta doesn't stick to the bottom of the pot. Cook the pasta for about 8-10 minutes, or until al dente, depending on package instructions.

        Add Spinach and Cream: Once the pasta is cooked, stir in the chopped spinach and heavy cream. Allow the spinach to wilt for about 2-3 minutes.

          Season and Flavor: Remove the pot from heat, and stir in the lemon zest and juice. Add in the grated Parmesan cheese, red pepper flakes (if using), and season with salt and pepper to taste. Mix thoroughly until creamy and well combined.
