12 oz (340g) penne pasta

14 oz (400g) kielbasa sausage, sliced

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (any color), diced

1 cup cherry tomatoes, halved

4 cups chicken broth

1 tsp smoked paprika

1 tsp Italian seasoning

Salt and pepper to taste

2 cups spinach (fresh or frozen)

1 cup shredded mozzarella cheese

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Kielbasa: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced kielbasa and sauté for about 5-7 minutes, until browned. Remove and set aside.

    Cook Vegetables: In the same pot, add the diced onion and bell pepper. Cook for about 3 minutes until they start to soften. Stir in the minced garlic and cook for an additional minute until fragrant.

      Combine Ingredients: Add the penne pasta, cherry tomatoes, chicken broth, smoked paprika, Italian seasoning, salt, and pepper to the pot. Stir well to combine.

        Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 10-12 minutes, stirring occasionally, until the pasta is cooked al dente and most of the liquid has been absorbed.

          Add Kielbasa and Spinach: Stir in the browned kielbasa and spinach. Cover again and let cook for another 2-3 minutes, just until the spinach is wilted and everything is heated through.

            Cheesy Finish: Remove the pot from heat and sprinkle shredded mozzarella cheese on top. Cover for about 2 minutes to allow the cheese to melt.
