Sauté Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking until the onion is translucent (about 3-4 minutes).
Add Ingredients: Stir in the diced ham, dried thyme, black pepper, and red pepper flakes (if using). Cook for another 2 minutes, letting the ham lightly brown and releasing its flavors.
Incorporate Pasta: Add the uncooked pasta to the pot, followed by the chicken broth and heavy cream. Stir well to combine, ensuring the pasta is submerged in the liquid.
Cook the Pasta: Bring the mixture to a simmer. Reduce the heat to low, cover the pot, and let it cook for about 12-15 minutes, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed.
Add Peas & Cheese: Once the pasta is done, stir in the frozen peas and grated Parmesan cheese. Cook for an additional 2-3 minutes until the peas are heated through and the cheese is melted, creating a creamy sauce.
