Sauté Garlic: In a large pot or deep skillet, melt the butter over medium heat. Add the minced garlic and red pepper flakes. Sauté for about 1-2 minutes, until the garlic is fragrant but not browned.
Add Broth and Spaghetti: Pour in the vegetable broth and bring it to a boil. Add the spaghetti, making sure it's submerged in the broth.
Cook the Pasta: Reduce the heat and let the spaghetti simmer for about 9-12 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid.
Add Spinach and Cheese: Once the spaghetti is cooked, stir in the fresh spinach (if using) and let it wilt for about a minute. Then, remove the pot from heat and add the grated Parmesan cheese, mixing until creamy and well combined.
Season: Taste and season with salt and black pepper as desired. If you prefer extra cheesiness, you can sprinkle additional Parmesan on top.
