8 oz (225g) pasta (your choice: fettuccine, penne, or spaghetti)

2 tablespoons olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 teaspoon dried basil

1 teaspoon dried dill

1 cup vegetable or chicken broth

1 cup heavy cream

8 oz (225g) cooked salmon, flaked (canned or freshly cooked)

Salt and pepper, to taste

1/2 cup grated Parmesan cheese

Fresh parsley, chopped, for garnish

Zest of 1 lemon (optional)

Instructions
 

Sauté Aromatics: In a large pot over medium heat, add the olive oil. Once hot, add the chopped onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

    Cook Cherry Tomatoes: Add the cherry tomatoes, dried basil, and dried dill to the pot. Cook for 2-3 minutes until the tomatoes begin to soften.

      Add Pasta and Broth: Pour in the vegetable or chicken broth and bring to a simmer. Add the pasta, ensuring it is submerged in the liquid. Cover the pot and cook according to the pasta package instructions, usually about 10-12 minutes, stirring occasionally.

        Stir in Cream and Salmon: Once the pasta is al dente and most of the liquid is absorbed, reduce the heat to low. Stir in the heavy cream, flaked salmon, and Parmesan cheese. Mix well until the cheese is melted and the pasta is coated in a creamy sauce.
