12 oz (340g) of penne or rotini pasta

1 lb (450g) smoked sausage (Andouille or your favorite), sliced

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), chopped

1 can (14.5 oz) diced tomatoes with juices

3 cups chicken broth

1 cup heavy cream

2 teaspoons Cajun seasoning

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

1 cup shredded Parmesan cheese (for serving)

Instructions
 

Sauté the Sausage: In a large pot over medium heat, add the olive oil. Once hot, add the sliced sausage and cook until browned (about 5 minutes). Stir occasionally to ensure even cooking. Remove the sausage from the pot and set it aside.

    Cook the Vegetables: In the same pot, add the diced onion and chopped bell pepper. Sauté for about 3-4 minutes until the onions are translucent. Add minced garlic and continue to sauté for another 1-2 minutes until fragrant.

      Combine Ingredients: Return the browned sausage to the pot. Add the diced tomatoes (with their juices), chicken broth, Cajun seasoning, and smoked paprika. Stir well to combine.

        Add Pasta: Bring the mixture to a boil, then add the pasta. Stir well and cover the pot. Let it cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid.

          Make it Creamy: Reduce the heat to low and stir in the heavy cream. Mix thoroughly until everything is well combined. Let it simmer for an additional 2-3 minutes. If the mixture seems too thick, you can add a bit more chicken broth or water until you reach your desired consistency.

            Final Seasoning: Taste the pasta and adjust seasoning with salt and pepper if needed.

              Serve: Remove from heat and garnish with chopped parsley. Serve warm with a sprinkle of Parmesan cheese on top.
