1 lb (450g) boneless, skinless chicken breasts, sliced into strips

1 tablespoon olive oil

1 medium onion, sliced

1 bell pepper (red or green), sliced

1 teaspoon minced garlic

2 teaspoons chili powder

1 teaspoon paprika

1 teaspoon cumin

1/2 teaspoon oregano

Salt and pepper to taste

8 oz (225g) penne or rotini pasta

3 cups chicken broth

1 can (14 oz) diced tomatoes, undrained

1 cup corn (fresh, frozen or canned)

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the sliced chicken strips and season with salt, pepper, chili powder, paprika, cumin, and oregano. Cook for about 5-7 minutes, stirring occasionally until the chicken is browned and cooked through. Remove the chicken from the pot and set aside.

    In the same pot, add the sliced onion and bell pepper. Sauté for 3-5 minutes until they soften. Add the minced garlic and cook for an additional minute until fragrant.

      Return the cooked chicken to the pot. Stir in the pasta, chicken broth, and diced tomatoes (with their juices). Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and let it cook for about 10-12 minutes, or until the pasta is al dente, stirring occasionally to prevent sticking.

        Once the pasta is cooked, stir in the corn and half of the shredded cheese. Mix well until the cheese melts and everything is combined. Remove from heat.

          Serve the one pot fajita pasta hot, topped with the remaining cheese and garnished with fresh cilantro. Serve lime wedges on the side to squeeze over for extra flavor. Enjoy your meal!
