One Pot Cheesy Taco Pasta

12 oz penne pasta

1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 can (15 oz) diced tomatoes with green chilies

4 cups beef or chicken broth

1 cup corn kernels (fresh, frozen, or canned)

1.5 cups shredded cheddar cheese

1 cup black beans, drained and rinsed

1 cup bell pepper, diced (any color)

1 tbsp olive oil

Salt and pepper to taste

Fresh cilantro, chopped for garnish

Avocado and lime wedges for serving

Instructions
 

Heat the Oil: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté until softened, about 3-4 minutes.

    Cook the Meat: Add the ground beef or turkey to the pot, breaking it up with a wooden spoon. Cook until browned and fully cooked, about 5-7 minutes. Drain any excess fat.

      Add Seasonings: Stir in the minced garlic and taco seasoning. Sauté for another minute until fragrant.

        Combine Ingredients: Add the penne pasta, diced tomatoes (with juices), corn, bell pepper, and broth to the pot. Stir well to combine all ingredients.

          Cook the Pasta: Bring the mixture to a boil, then reduce heat to medium-low. Cover and let simmer for about 12-15 minutes, or until the pasta is al dente and most of the liquid has been absorbed. Stir occasionally to prevent sticking.

            Add Beans and Cheese: Once the pasta is cooked, stir in the black beans and shredded cheddar cheese. Mix until the cheese is melted and everything is well combined.

              Taste and Adjust: Taste the pasta and season with salt and pepper as needed.
