Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons olive oil

1 small onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 can (14.5 oz) diced tomatoes, undrained

4 cups chicken broth

1 pound (450g) penne pasta

2 tablespoons Cajun seasoning

1 teaspoon smoked paprika

1 teaspoon dried oregano

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper (or to taste)

1 cup heavy cream

1 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Sear the Chicken: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the diced chicken thighs and season with salt and pepper. Cook until browned on all sides, about 5 minutes. Remove chicken from the pot and set aside.

    Sauté Veggies: In the same pot, add the diced onion and cook for about 3-4 minutes until translucent. Add the minced garlic, red, and green bell peppers, cooking for an additional 3 minutes until softened.

      Combine Ingredients: Add the diced tomatoes (with juice), chicken broth, and Cajun seasoning. Stir well to combine. Bring the mixture to a gentle boil.

        Add Pasta and Chicken: Once boiling, add the penne pasta and browned chicken back to the pot. Stir to combine and reduce the heat to a simmer. Cover and cook for about 12-15 minutes, stirring occasionally, until the pasta is al dente and the liquid has mostly absorbed.

          Finish the Dish: Stir in the heavy cream and Parmesan cheese. Mix until everything is well-incorporated and creamy. Taste and adjust seasoning with additional salt and pepper if necessary.

            Garnish and Serve: Remove from heat and let it sit for a couple of minutes before serving. Garnish with fresh chopped parsley. Serve hot and enjoy!
