1 lb (450g) boneless, skinless chicken breasts, diced

8 oz (225g) penne pasta

1 cup buffalo sauce (adjust to taste)

2 cups chicken broth (low-sodium recommended)

1 cup heavy cream

1 cup shredded cheddar cheese

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 green onions, sliced (for garnish)

Optional: Crumbled blue cheese for topping

Sauté the Chicken: In a large pot, heat the olive oil over medium heat. Add the diced chicken and season with garlic powder, onion powder, salt, and pepper. Cook until the chicken is lightly browned and cooked through, about 6-8 minutes.

    Add Buffalo Sauce: Pour in the buffalo sauce and stir well to coat the chicken. Let it simmer for about 2 minutes to enhance the flavors.

      Combine Ingredients: Add the uncooked penne pasta and chicken broth to the pot. Stir to mix everything well and bring it to a boil.

        Cook the Pasta: Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 12-15 minutes, or until the pasta is tender and has absorbed most of the liquid, stirring occasionally.

          Add Cream and Cheese: Remove the pot from the heat. Stir in the heavy cream and shredded cheddar cheese until the cheese is melted and the mixture is creamy. Adjust the seasoning with additional salt and pepper if desired.
