Ingredients

1 pound smoked sausage, sliced (such as kielbasa or andouille)

1.5 pounds baby potatoes, halved or quartered

1 tablespoon olive oil

1 packet (1 oz) ranch seasoning mix

2 cups shredded cheddar cheese

1 cup broccoli florets (optional)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Potatoes: In a large mixing bowl, combine the halved or quartered baby potatoes with olive oil, ranch seasoning, garlic powder, onion powder, salt, and pepper. Toss until the potatoes are evenly coated.

Combine with Sausage: In a large baking dish or a rimmed baking sheet, spread the seasoned potatoes in a single layer. Scatter the sliced smoked sausage evenly on top of the potatoes.

Bake: Place the baking dish in the preheated oven and bake for 25 minutes.

Add Cheese and Broccoli: After 25 minutes, remove the baking dish from the oven. If using, add the broccoli florets and sprinkle the shredded cheddar cheese over the top. Return the dish to the oven for an additional 10 minutes, or until the cheese is melted and bubbly, and the potatoes are fork-tender.

Garnish and Serve: Remove the dish from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired. Serve hot and enjoy!
