Ingredients

For the crust:

1 ½ cups oatmeal cookies, crushed (about 15 cookies)

4 tbsp unsalted butter, melted

2 tbsp brown sugar

1 tsp cinnamon

For the cheesecake filling:

16 oz cream cheese, softened

1 cup granulated sugar

1 tsp vanilla extract

3 large eggs

1 cup sour cream

For the creamy topping:

1 cup heavy whipping cream

2 tbsp powdered sugar

½ tsp vanilla extract

For garnish:

Mini oatmeal cookies

Drizzle of caramel sauce (optional)

Instructions

Prepare the Crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine crushed oatmeal cookies, melted butter, brown sugar, and cinnamon. Stir until the mixture resembles wet sand. Press this mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 8-10 minutes. Remove from the oven and let cool.

Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add granulated sugar and vanilla extract, mixing well. Add the eggs one at a time, ensuring each one is fully incorporated before adding the next. Finally, mix in the sour cream until fully combined and smooth.

Bake the Cheesecake: Pour the cheesecake filling into the cooled crust. Tap the pan on the counter to release any air bubbles. Bake in the preheated oven for 55-60 minutes or until the center is mostly set with a slight jiggle. Turn off the oven and crack the door open. Let the cheesecake cool in the oven for 1 hour to prevent cracks. Remove from the oven and let cool at room temperature for another hour before refrigerating.

Chill: Cover the cheesecake and refrigerate for at least 4 hours or overnight for best results.

Prepare the Creamy Topping: In a mixing bowl, beat the heavy whipping cream with powdered sugar and vanilla extract until soft peaks form. Spread or pipe the whipped cream on top of the chilled cheesecake.

Garnish: Decorate the cheesecake with mini oatmeal cookies and a drizzle of caramel sauce if desired.

Serve: Slice and enjoy this decadent Oatmeal Creme Pie Cheesecake that combines the flavors of a classic dessert into a rich cheesecake!
