Ingredients

1 ½ cups all-purpose flour

1 cup granulated sugar

1 teaspoon baking soda

½ teaspoon salt

1 cup strawberry soda (or any strawberry flavored soda)

⅓ cup vegetable oil

1 tablespoon white vinegar

1 teaspoon vanilla extract

1 cup fresh strawberries, chopped (optional for topping)

Powdered sugar (for dusting)

Instructions

Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper for easy release.

In a large mixing bowl, sift together the flour, granulated sugar, baking soda, and salt. Make sure there are no lumps.

Create a well in the center of the dry ingredients and add the strawberry soda, vegetable oil, white vinegar, and vanilla extract.

Mix until just combined. Be careful not to over-mix, as this can affect the cake's texture.

Pour the batter into the prepared cake pan, smoothing the top with a spatula.

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Once cooled, top with chopped strawberries and dust with powdered sugar for a beautiful presentation.

Slice and serve this delightful No-Egg Strawberry Soda Cake, and enjoy the refreshing flavors!
