2 cups mascarpone cheese

1 cup heavy cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup brewed espresso or strong coffee, cooled

1/3 cup coffee liqueur (optional)

24 ladyfinger cookies (savoiardi)

1/4 cup cocoa powder, for dusting

Fresh strawberries or raspberries for garnish (optional)

Dark chocolate shavings for garnish (optional)

Instructions
 

In a large mixing bowl, combine the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, whip the mixture until it reaches soft peaks. It should be creamy and hold its shape.

    In a shallow dish, mix the cooled espresso or strong coffee with the coffee liqueur, if using.

      Quickly dip each ladyfinger into the coffee mixture, ensuring they soak for only a second to avoid becoming too soggy. Lay them out in a single layer at the bottom of a 9x13-inch baking dish.

        Spread half of the mascarpone mixture over the layer of ladyfingers, smoothing it out with a spatula.

          Repeat the process with another layer of dipped ladyfingers, followed by the remaining mascarpone mixture. Use a spatula to smooth the top.

            Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the cake to set.

              Before serving, dust the top with cocoa powder using a fine sieve. Garnish with fresh strawberries or raspberries and dark chocolate shavings, if desired.
