2 cups crushed Italian biscotti cookies

1 cup mascarpone cheese

1 cup heavy whipping cream

1/2 cup powdered sugar

1/2 cup strong brewed espresso, cooled

1/4 cup coffee liqueur (optional)

1 teaspoon vanilla extract

Cocoa powder for dusting

Fresh berries or chocolate shavings for garnish (optional)

Instructions
 

In a medium bowl, combine the crushed Italian biscotti cookies with the brewed espresso and coffee liqueur (if using). Allow the cookies to soak for about 5 minutes until they soften slightly.

    In a separate large mixing bowl, beat the heavy whipping cream with a hand mixer on high speed until soft peaks form.

      Gently fold in the mascarpone cheese, powdered sugar, vanilla extract, and half of the soaked biscuit mixture into the whipped cream until smooth and fully incorporated. Be careful not to deflate the whipped cream.

        In a 9x9-inch baking dish, layer half of the remaining biscotti mixture evenly across the bottom.

          Spread half of the mascarpone mixture over the biscotti layer, smoothing it out with a spatula. Repeat with the remaining cookies and mascarpone mixture, layering them in the dish.

            Cover the dish with plastic wrap and refrigerate for at least 4 hours (or overnight) to allow the flavors to meld and the cake to firm up.

              Before serving, dust the top with cocoa powder and garnish with fresh berries or chocolate shavings if desired.
