2 boxes (3.4 oz each) instant vanilla pudding mix

4 cups milk

1 tub (12 oz) whipped topping (thawed)

1 box (14.4 oz) graham crackers

1 cup semi-sweet chocolate chips

¼ cup unsweetened cocoa powder

¼ cup powdered sugar

½ cup unsalted butter

2 teaspoons vanilla extract

Instructions
 

In a large mixing bowl, combine the instant vanilla pudding mix and milk. Whisk until the mixture thickens, about 2 minutes.

    Gently fold the thawed whipped topping into the pudding mixture until well combined. Set aside.

      On the bottom of a 9x13 inch baking dish, arrange a single layer of graham crackers (about 1/3 of the box).

        Spread half of the pudding mixture over the layer of graham crackers.

          Add another layer of graham crackers on top of the pudding layer.

            Spread the remaining pudding mixture evenly over the second layer of crackers.

              Top with a final layer of graham crackers.

                To prepare the chocolate glaze, in a small saucepan, melt the butter over medium heat. Once melted, add the chocolate chips, cocoa powder, and powdered sugar, stirring constantly until smooth and well combined. Remove from heat and stir in the vanilla extract. Let cool slightly.

                  Pour the chocolate glaze over the top layer of graham crackers, spreading it out evenly.

                    Refrigerate the cake for at least 4 hours (or overnight) to allow the layers to set and flavors to meld.

                      When ready to serve, slice into squares and enjoy your delicious no-bake chocolate éclair cake!
