Ingredients

1 pound ground chicken

1 cup finely chopped mushrooms (cremini or button)

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1 large egg

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for a kick)

1/4 cup milk

2 tablespoons olive oil (for frying)

Instructions

In a large mixing bowl, combine the ground chicken, chopped mushrooms, breadcrumbs, Parmesan cheese, minced garlic, parsley, egg, oregano, salt, pepper, and red pepper flakes. Mix until all the ingredients are well combined.

Gradually add the milk to the mixture until it reaches a moist but manageable consistency. You may not need the entire 1/4 cup, so add it slowly.

Use your hands to form the mixture into meatballs, about 1.5 inches in diameter. Place them on a baking sheet lined with parchment paper.

In a large skillet, heat the olive oil over medium heat. Once hot, carefully add the meatballs to the skillet. Cook for about 5-7 minutes on each side until they are golden brown and cooked through (internal temperature should reach 165°F).

Once cooked, you can serve the meatballs immediately with your choice of sides, such as spaghetti, a green salad, or roasting vegetables.

Optionally, drizzle with your favorite marinara sauce or sprinkle with more fresh parsley and grated Parmesan for extra flavor.

Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 4 (about 16 meatballs)
