4 English muffins, split in half

4 large eggs

1 cup shredded mozzarella cheese

1 cup diced bell peppers (red, green, or yellow)

1/2 cup cooked and crumbled breakfast sausage or bacon (optional)

1/2 cup cherry tomatoes, halved

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Muffin Base: Place the halved English muffins cut-side up on a baking sheet lined with parchment paper.

      Cook Eggs: In a medium bowl, whisk together the eggs, salt, pepper, garlic powder, and dried oregano. Pour the egg mixture into a non-stick skillet over medium heat. Cook, stirring gently until the eggs are softly scrambled but still slightly runny. Remove from heat.

        Assemble Muffin Pizzas: On each muffin half, sprinkle a layer of mozzarella cheese. Place a spoonful of the scrambled eggs on top of the cheese, followed by the diced bell peppers, crumbled sausage (if using), and halved cherry tomatoes.

          Add More Cheese: Top each muffin with an additional sprinkle of mozzarella cheese.

            Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly, and the muffins are toasted.
