2 cups of shredded Chihuahua cheese (or Monterey Jack cheese)

1 cup of shredded sharp cheddar cheese

1 cup of evaporated milk

1 tablespoon of butter

1 tablespoon of all-purpose flour

1 small jalapeño, finely chopped (seeds removed for less heat)

1 clove of garlic, minced

1 teaspoon of ground cumin

½ teaspoon of chili powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Tortilla chips (for serving)

Instructions
 

Prep the Ingredients: Gather and measure all ingredients. Finely chop the jalapeño and mince the garlic.

    Make the Roux: In a medium saucepan over medium heat, melt the butter. Add the flour and stir well for about 1 minute until you create a blonde roux. This will help thicken your cheese dip.

      Add Milk: Slowly pour in the evaporated milk while continuously whisking to avoid any lumps. Heat until the mixture begins to bubble slightly.
