Ingredients
  

4 large eggs

2 English muffins, split in half

1 ripe avocado, mashed

1 cup cooked and crumbled chorizo sausage

1 cup fresh pico de gallo (or diced tomatoes, onions, and cilantro)

1 tablespoon fresh lime juice

1/4 cup cilantro, chopped

1/2 teaspoon smoked paprika

2 tablespoons butter

Salt and pepper, to taste

Optional: Hot sauce, for serving

Prepare the Avocado Mix: In a bowl, combine the mashed avocado, lime juice, chopped cilantro, smoked paprika, salt, and pepper. Set aside.

    Toast the Muffins: In a toaster or under a broiler, lightly toast the English muffin halves until golden brown. Set aside and keep warm.

      Cook Chorizo: In a skillet over medium heat, cook the crumbled chorizo until it's browned and crispy, about 5-7 minutes. Remove from heat and keep warm.

        Poach the Eggs: Fill a medium saucepan with water and bring it to a gentle simmer. Crack each egg into a small bowl, then gently slide it into the simmering water one at a time. Poach for about 3-4 minutes for runny yolks, or a bit longer for medium yolks. Remove with a slotted spoon and drain on paper towels.

          Assemble the Benedict: On each toasted muffin half, place a generous spoonful of the avocado mixture, followed by a layer of cooked chorizo. Top each with a poached egg.

            Top with Pico de Gallo: Spoon the fresh pico de gallo generously over each egg and muffin.

              Serve: Optionally, drizzle with hot sauce for a spicy kick. Serve immediately while everything is hot.
