Ingredients
  

4 boneless, skinless chicken breasts

2 large zucchini, sliced into rings

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 small red onion, chopped

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon paprika

Salt and pepper to taste

½ cup feta cheese, crumbled

½ cup olives (black or green), pitted and sliced

¼ cup olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large mixing bowl, combine the zucchini, red bell pepper, cherry tomatoes, red onion, and garlic. Drizzle with olive oil and sprinkle with oregano, basil, paprika, salt, and pepper. Toss to coat the vegetables evenly.

      In a baking dish, spread out the vegetable mixture evenly to create a bed for the chicken.

        Season the chicken breasts with salt, pepper, and any leftover herbs before placing them on top of the vegetable layer in the baking dish.

          Scatter the sliced olives and crumbled feta cheese over the chicken.

            Cover the baking dish with aluminum foil and bake in the preheated oven for about 25 minutes.

              After 25 minutes, remove the foil and bake for an additional 15 minutes or until the chicken is cooked through and has an internal temperature of 165°F (75°C). The vegetables should be tender and fragrant.

                Once done, take the dish out of the oven and let it rest for about 5 minutes. Garnish with fresh parsley before serving.
