Mason jar salads have gained popularity as a convenient and visually appealing way to prepare meals ahead of time. The concept is simple: layer your ingredients in a Mason jar, starting with the dressing at the bottom and ending with the greens at the top. This layering technique not only keeps your ingredients fresh but also prevents sogginess, allowing you to enjoy a crisp salad days after preparation.

Ingredients

1 cup cooked black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup diced tomatoes (fresh or canned)

1 avocado, diced

1 cup shredded cheese (cheddar or Mexican blend)

1 cup shredded lettuce (romaine or iceberg)

1/2 cup salsa (your choice of mild or spicy)

1/4 cup sour cream or Greek yogurt

1 tbsp lime juice

1 tsp taco seasoning

Salt and pepper, to taste

Tortilla chips, for topping (optional)

Instructions

Prepare the Dressing: In a small bowl, mix together the salsa, sour cream or Greek yogurt, lime juice, taco seasoning, salt, and pepper. Set aside.

Layer the Ingredients: Start by adding the ingredients in layers into mason jars. This way, your salad remains fresh and crisp until serving.

      - Begin with a layer of black beans at the bottom.

        - Follow with a layer of corn.

          - Next, add the diced tomatoes.

            - Spoon a layer of the dressing on top of the tomatoes.

              - Add the diced avocado for a creamy texture.

                - Sprinkle the shredded cheese on top of the avocado.

                  - Next, layer in the shredded lettuce.

Seal and Store: If you're preparing these in advance, tightly seal the mason jars with their lids. This will keep the ingredients fresh in the refrigerator for up to 3 days.

Serve: When ready to eat, simply shake the jar to mix the ingredients or pour them into a bowl. Add tortilla chips on top for an extra crunch!
