10 cups popped popcorn (about 1/2 cup unpopped kernels)

1 cup granulated sugar

1/2 cup unsalted butter

1/4 cup light corn syrup

1/2 teaspoon salt

1/2 teaspoon baking soda

1 teaspoon vanilla extract

2 cups mini marshmallows

1 cup chopped nuts (optional, such as almonds or pecans)

Instructions
 

Prepare the Popcorn: Begin by popping the popcorn using your preferred method. Place the popped popcorn in a large mixing bowl, ensuring there are no unpopped kernels.

    Make the Caramel Sauce: In a medium saucepan over medium heat, combine the granulated sugar, unsalted butter, light corn syrup, and salt. Stir the mixture continuously until it comes to a boil.

      Cook the Caramel: Once boiling, stop stirring and allow the mixture to boil for about 4-5 minutes until it turns a rich golden color. It should reach the soft-ball stage (around 240°F or 115°C).

        Add Flavorings: Remove the saucepan from heat and quickly stir in the baking soda and vanilla extract. Be careful, as it will bubble up.

          Combine with Popcorn: Immediately pour the caramel sauce over the popcorn and quickly toss to coat all the kernels evenly.

            Add Marshmallows and Nuts: While the popcorn is still warm, fold in the mini marshmallows and chopped nuts (if using). The heat will slightly soften the marshmallows, making them extra gooey.

              Set the Mixture: Spread the caramel popcorn mixture onto a large baking sheet lined with parchment paper. Allow it to cool for about 30 minutes until set.

                Break Apart: Once cooled, break the caramel corn into clusters and serve immediately or store in an airtight container for up to a week.
