1 cup unsalted butter, softened

3/4 cup granulated sugar

3/4 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup semi-sweet chocolate chips

1 cup diced maraschino cherries, drained and patted dry

1/2 cup chopped walnuts (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Cream the Butter and Sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This should take about 3-4 minutes.

      Add Egg and Vanilla: Beat in the egg and vanilla extract until well incorporated.

        Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.

          Mix Dry and Wet Ingredients: Gradually incorporate the dry ingredients into the wet mixture, mixing just until the flour is incorporated. Do not overmix.

            Fold in Chocolate Chips and Cherries: Gently fold in the semi-sweet chocolate chips, diced maraschino cherries, and walnuts (if using) until evenly distributed.

              Scoop and Shape: Using a cookie scoop or tablespoon, drop rounded dough balls onto the prepared baking sheet, leaving some space between them as they will spread while baking.

                Bake the Cookies: Bake in the preheated oven for 10-12 minutes or until the edges start to turn golden brown. The centers will be soft but will firm up as they cool.
