Ingredients

1 cup unsalted butter, softened

2 cups granulated sugar

4 large eggs

3 cups all-purpose flour

1/2 cup maple syrup (preferably pure)

1 cup buttermilk

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup chopped walnuts (optional)

Instructions

Preheat your oven to 350°F (175°C). Grease and flour a 10-inch bundt pan or loaf pan.

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and maple syrup until fully incorporated.

In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Start and end with the flour mixture. Mix until just combined. If using, fold in the chopped walnuts.

Pour the batter into the prepared bundt pan, smoothing the top with a spatula.

Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted in the center comes out clean.

Once baked, allow the cake to cool in the pan for about 15 minutes before inverting onto a wire rack to cool completely.

Optional: drizzle additional maple syrup or a simple glaze made with powdered sugar and a little maple syrup over the cooled cake before serving.
