Ingredients

2 cups all-purpose flour

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/2 cup unsalted butter, softened

2 large eggs

1 cup buttermilk

2 teaspoons vanilla extract

2 cups peeled and diced apples (Granny Smith or Honeycrisp recommended)

1/2 cup powdered sugar (for glaze)

2 tablespoons milk (for glaze)

Additional ground cinnamon and sugar mixture (for topping)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.

Cream Butter and Sugar: In a large mixing bowl, beat the softened butter with an electric mixer until creamy. Gradually add the granulated sugar and brown sugar, continuing to beat until the mixture is light and fluffy.

Add Eggs and Vanilla: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in the vanilla extract.

Combine Wet Ingredients: Gradually add the buttermilk to the butter mixture, mixing until well combined.

Incorporate Dry Ingredients: Slowly add the dry ingredient mixture to the wet ingredients, mixing just until combined. Be careful not to overmix; a few lumps are okay.

Fold in Apples: Gently fold in the diced apples until evenly distributed in the batter.

Pour and Bake: Pour the batter into the prepared baking pan, smoothing the top with a spatula. Bake in the preheated oven for about 35-40 minutes or until a toothpick inserted into the center comes out clean.

Make the Glaze: While the cake is baking, in a small bowl, whisk together the powdered sugar and milk until smooth and drizzly. If the glaze is too thick, add a tiny bit more milk until you reach the desired consistency.

Cool and Glaze: Once the cake has finished baking, remove it from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely. Drizzle the glaze over the cooled cake and sprinkle with a mixture of cinnamon and sugar for an extra touch.

Serve and Enjoy: Cut into squares or slices, and enjoy this cozy apple fritter cake with a warm cup of coffee or tea!
