1/2 cup cucumber, diced

1/2 cup bell pepper (red or yellow), diced

1/2 cup black olives, sliced

1/4 cup pepperoncini peppers, sliced

1/2 cup salami, thinly sliced and chopped

1/2 cup provolone cheese, diced

1/4 cup grated Parmesan cheese

1/4 cup fresh basil, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 tablespoon Dijon mustard

1/2 teaspoon garlic powder

Salt and pepper to taste

Instructions

Prepare the Veggies: In a large mixing bowl, combine the chopped romaine lettuce, cherry tomatoes, red onion, cucumber, bell pepper, black olives, and pepperoncini peppers. Toss well to mix all the vegetables evenly.

Add the Proteins: Next, layer in the chopped salami and diced provolone cheese. Gently fold them into the salad mixture without crushing the ingredients.

Make the Dressing: In a small bowl or jar, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic powder, salt, and pepper. Adjust the seasoning to taste, ensuring a balanced flavor.

Dress the Salad: Pour the dressing over the salad mixture and toss gently until all the ingredients are well-coated in the dressing.

Finish with Cheese and Herbs: Sprinkle the grated Parmesan cheese and fresh basil on top of the salad. Give it a final gentle toss to combine.

Serve: Transfer to a serving platter or individual bowls. Enjoy chilled or at room temperature.
