To begin crafting your low carb cream cheese fudge, it's essential to prepare your ingredients correctly. Start by taking your cream cheese out of the refrigerator and letting it soften at room temperature for about 30 minutes. This step is crucial because softened cream cheese blends more easily with the other ingredients, resulting in a creamier texture.

Ingredients

8 oz (226g) cream cheese, softened

1/2 cup unsweetened cocoa powder

1/2 cup powdered erythritol or your preferred low-carb sweetener

1/4 cup unsalted butter, melted

1 tsp vanilla extract

1/4 tsp salt

Optional toppings: chopped nuts, sugar-free chocolate chips, or coconut flakes

Instructions

In a medium-sized mixing bowl, beat the softened cream cheese until smooth and creamy.

Add the melted butter, erythritol, cocoa powder, vanilla extract, and salt to the bowl. Mix until all the ingredients are well incorporated and you have a smooth, chocolatey mixture.

Line an 8x8 inch baking dish with parchment paper for easy removal. Pour the fudge mixture into the dish and spread it evenly using a spatula.

If desired, sprinkle your choice of toppings (like chopped nuts or chocolate chips) evenly on top of the fudge and gently press them into the surface.

Cover the dish with plastic wrap and place it in the refrigerator for at least 2 hours, or until the fudge is firm.

Once firm, lift the fudge out of the dish using the edges of the parchment paper and cut it into squares.

Store any leftovers in an airtight container in the fridge for up to a week.
