Ingredients

1 lb boneless, skinless chicken tenders

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

Zest of 1 lemon

2 tablespoons fresh lemon juice

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 teaspoon smoked paprika

Salt and pepper to taste

2 large eggs

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easier cleanup.

Prepare the Breading Station: In a shallow dish, combine the breadcrumbs, grated Parmesan cheese, minced garlic, lemon zest, dried Italian herbs, smoked paprika, salt, and pepper. Mix well.

Prepare the Egg Wash: In another shallow dish, whisk the eggs with the lemon juice until well combined.

Coat the Chicken Tenders: Dip each chicken tender into the egg wash, letting the excess drip off. Then, coat it in the breadcrumb mixture, pressing gently to ensure the breadcrumbs adhere well. Place the coated tenders on the prepared baking sheet.

Drizzle with Olive Oil: Lightly drizzle olive oil over the chicken tenders to help them crisp up in the oven.

Bake: Bake the chicken tenders for 20-25 minutes, or until they are golden brown and cooked through (internal temperature should reach 165°F or 75°C). Turn them halfway through for even browning.

Garnish and Serve: Once out of the oven, let the chicken tenders rest for a couple of minutes. Garnish with freshly chopped parsley and serve with extra lemon wedges on the side for a bright, tangy kick.

                Prep Time: 15 minutes | Total Time: 40 minutes | Servings: 4
