Ingredients

1 cup all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

3 large eggs

Zest of 2 lemons

½ cup freshly squeezed lemon juice

1 tablespoon vanilla extract

1 cup whole milk

Powdered sugar for dusting (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes. This helps to incorporate air for a lighter cake.

Add Eggs and Flavorings: Beat in the eggs one at a time, mixing well after each addition. Then add the lemon zest, lemon juice, and vanilla extract. Mix until well combined.

Incorporate Milk and Dry Ingredients: Gradually add the flour mixture to the wet ingredients, alternating with the whole milk. Start and end with the flour mixture. Mix until just combined; do not overmix.

Pour and Bake: Pour the batter into the prepared cake pan. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Cool the Cake: Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Dust with Powdered Sugar: Once the cake has cooled, dust the top with powdered sugar for an elegant finish, if desired.

Serve: Slice the cake and enjoy it with a dollop of whipped cream or fresh berries for an extra touch!
