For the Cupcakes:

1 ½ cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

Zest of 2 large lemons

½ cup buttermilk

1 teaspoon vanilla extract

2 tablespoons fresh lemon juice

For the Cream Cheese Frosting:

8 ounces cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

1 teaspoon vanilla extract

1 tablespoon fresh lemon juice

Lemon zest for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a cupcake tin with paper liners.

    Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, use an electric mixer to cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

        Add Eggs and Lemon Zest: Add the eggs one at a time, mixing well after each addition. Stir in the lemon zest.

          Combine Wet Ingredients: In a separate bowl, mix the buttermilk, vanilla extract, and fresh lemon juice.

            Mix Everything Together: Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk mixture. Start and end with the flour mixture. Mix until just combined but do not overmix.

              Fill Cupcake Liners: Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full.

                Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

                  Prepare the Frosting: In a large mixing bowl, beat the softened cream cheese and butter together until smooth and creamy. Gradually add the powdered sugar, mixing until well combined. Add the vanilla extract and lemon juice, mixing until smooth.

                    Frost the Cupcakes: Once the cupcakes are completely cool, generously frost each cupcake with the cream cheese frosting. Sprinkle with additional lemon zest if desired.
