8 oz (225 g) cream cheese, softened

1/2 cup (100 g) granulated sugar

1/2 cup (120 ml) heavy whipping cream

1/4 cup (60 ml) fresh lemon juice (about 2 lemons)

Zest of 1 lemon

1 teaspoon vanilla extract

1/4 teaspoon salt

Optional: crushed graham crackers for topping

In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until creamy and smooth, about 2 minutes.

    Gradually add the granulated sugar while continuing to mix until well combined and fluffy, about another 2 minutes.

      Pour in the fresh lemon juice, lemon zest, vanilla extract, and salt. Mix until everything is well blended and there are no lumps left.

        In a separate bowl, whip the heavy cream until stiff peaks form, making sure not to overbeat.

          Gently fold the whipped cream into the lemon cream cheese mixture using a spatula until fully combined. Be careful not to deflate the whipped cream.

            Spoon the mousse into individual serving glasses or bowls, layering with crushed graham crackers if desired for added texture.

              Refrigerate for at least 2 hours or until set. Serve chilled with an extra sprinkle of lemon zest on top for garnish.
