Ingredients

2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

3 large eggs

1 cup buttermilk

Zest of 2 lemons

1/4 cup fresh lemon juice

1 tsp vanilla extract

1 ½ tsp baking powder

½ tsp baking soda

¼ tsp salt

Optional: powdered sugar for dusting or lemon glaze for frosting

Instructions

Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.

Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream butter and sugar: In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy. This should take about 3-5 minutes using a hand or stand mixer.

Add eggs: Beat in the eggs one at a time, ensuring each is fully combined before adding the next.

Incorporate wet ingredients: Mix in the buttermilk, lemon zest, lemon juice, and vanilla extract until all the wet ingredients are well combined.

Combine mixtures: Gradually add in the dry flour mixture while mixing on low speed. Mix until just combined; do not overmix.

Bake the cake: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Cool the cakes: Let the cakes cool in the pans for about 10 minutes, then remove from the pans and transfer them to wire racks to cool completely.

Frosting (optional): If desired, prepare a lemon glaze or simply dust the cooled cakes with powdered sugar.

Serve: Once cooled and frosted, slice the cake to serve. Enjoy the bright, zesty flavor of this delicious lemon cake!
