2 cups leftover mashed potatoes

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (plus extra for coating)

1 large egg

2 green onions, finely chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Vegetable oil for frying

Combine Ingredients: In a large mixing bowl, combine the leftover mashed potatoes, cheddar cheese, Parmesan cheese, breadcrumbs, egg, green onions, garlic powder, onion powder, salt, and pepper. Mix until well blended. The mixture should be cohesive and slightly sticky; if too soft, add a bit more breadcrumbs.

    Shape the Puffs: With wet hands, scoop a small amount of the mixture (about 1 to 2 tablespoons) and shape it into a ball or oval. Repeat the process until all the mixture is formed into puffs.

      Coat the Puffs: Roll each potato puff in a shallow dish filled with breadcrumbs to coat evenly. This will give them a nice crunch when fried.

        Heat the Oil: In a large skillet or deep frying pan, heat about 1/2 inch of vegetable oil over medium heat until shimmering. To test if the oil is ready, drop a small amount of the mixture in — it should sizzle upon contact.

          Fry the Puffs: Carefully add a few puffs to the hot oil, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown and crispy.

            Drain Excess Oil: Once cooked, transfer the puffs to a plate lined with paper towels to drain excess oil.
