Lasagna Noodles:

12 lasagna noodles (regular or no-boil)

White Sauce (Béchamel):

4 tablespoons unsalted butter

¼ cup all-purpose flour

4 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon nutmeg

Salt and pepper to taste

Filling:

2 cups ricotta cheese

1 cup grated Parmesan cheese

2 cups shredded mozzarella cheese (divided)

1 egg

2 cups spinach (fresh or frozen)

1 teaspoon Italian seasoning

Toppings:

Additional mozzarella cheese for topping

Fresh basil leaves for garnish (optional)

Instructions
 

Prepare the Noodles: If using regular lasagna noodles, cook according to package instructions until al dente. Drain and set aside. For no-boil noodles, skip this step.

    Make the White Sauce: In a medium saucepan over medium heat, melt the butter. Stir in the flour and cook for about 2 minutes, forming a roux. Gradually whisk in the milk, ensuring there are no lumps. Continue stirring until the sauce thickens (about 5-7 minutes). Add garlic powder, onion powder, nutmeg, salt, and pepper. Set aside.

      Prepare the Filling: In a large bowl, mix the ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, egg, spinach, and Italian seasoning until well combined. Season with salt and pepper to taste.

        Assemble the Lasagna: Preheat your oven to 375°F (190°C). In a 9x13 inch baking dish, start by spreading a thin layer of the white sauce on the bottom. Layer 3-4 lasagna noodles over the sauce, followed by half of the cheese filling. Pour a portion of the white sauce over the filling. Repeat the layers (noodles, filling, white sauce) until the last layer is noodles topped with remaining white sauce and additional mozzarella cheese.

          Bake: Cover the lasagna loosely with aluminum foil (to prevent sticking, you can spray the foil with cooking spray) and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is golden and bubbly.

            Rest and Serve: Allow lasagna to cool for about 10-15 minutes before slicing. Garnish with fresh basil leaves if desired. Serve warm and enjoy the creamy goodness!
