12 ounces penne pasta

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 cup broccoli florets (fresh or frozen)

1 cup cherry tomatoes, halved

1 teaspoon dried Italian herbs (oregano and basil)

1 cup chicken broth

1 cup heavy cream

2 cups shredded cheddar cheese

1/2 cup grated Parmesan cheese

Fresh basil or parsley for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain, rinse under cold water, and set aside.

    Sauté the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the cut chicken pieces. Season with garlic powder, onion powder, salt, and pepper. Cook for 5-7 minutes, or until the chicken is golden brown and cooked through.

      Add Vegetables: Stir in the broccoli florets and cherry tomatoes. Sauté for an additional 3-4 minutes until the broccoli is tender but still bright green.

        Make the Sauce: Pour in the chicken broth and bring to a simmer. Lower the heat, then add the heavy cream and mix well. Sprinkle in the dried Italian herbs and stir.

          Cheesy Goodness: Gradually add the shredded cheddar cheese, stirring continuously until melted and smooth. Incorporate the cooked penne pasta and toss until the pasta is well coated in the cheese sauce. If the mixture seems too thick, add a little more chicken broth or cream for the desired consistency.
