1 cup graham cracker crumbs

1/4 cup granulated sugar

1/3 cup unsalted butter, melted

1 (14 oz) can sweetened condensed milk

1/2 cup fresh key lime juice (or regular lime juice)

1 tablespoon lime zest

2 large egg yolks

Whipped cream, for topping

Lime slices or zest, for garnish

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Prepare Crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are well coated and resemble wet sand.

      Form Tartlets: Press the crumb mixture evenly into the bottom and up the sides of a mini tartlet pan or muffin pan to create individual tartlet shells. Bake the crusts for about 8-10 minutes until lightly golden. Remove from the oven and let them cool completely.

        Make Filling: In a separate mixing bowl, whisk together the sweetened condensed milk, key lime juice, lime zest, and egg yolks until smooth and well blended.

          Fill the Tartlets: Spoon the lime filling into each cooled tartlet shell, filling them almost to the top.

            Bake Again: Return the filled tartlets to the oven and bake for an additional 10-12 minutes until the filling is set but still slightly jiggly in the center.

              Cool and Chill: Let the tartlets cool at room temperature for 30 minutes, then transfer them to the refrigerator to chill for at least 1 hour.
