Preheat your oven to 350°F (175°C). Grease a baking dish (approximately 9x9 inches) with olive oil or cooking spray.
In a mixing bowl, whisk together the eggs until well combined.
Add in the cottage cheese, chopped spinach, diced bell pepper, grated cheddar cheese, chopped onion, garlic powder, black pepper, salt, and oregano. Mix until all ingredients are fully incorporated.
Pour the egg mixture into the prepared baking dish, spreading it evenly.
Bake in the preheated oven for 25-30 minutes or until the center is set and the edges are slightly golden.
Remove from the oven and let it cool for a few minutes. Cut into squares and serve warm.
Optional: Garnish with fresh herbs before serving for added flavor and presentation.
