1 lb Italian sausage (mild or spicy, based on preference)

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, diced

1 bell pepper, diced (red or green)

4 cups low-sodium chicken broth

1 can (14 oz) diced tomatoes, undrained

1 can (15 oz) cannellini beans, drained and rinsed

1 cup fresh kale or spinach, chopped

1 tsp dried oregano

1 tsp dried basil

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

2 tbsp olive oil

Grated Parmesan cheese for serving

Fresh parsley for garnish (optional)

Instructions
 

Cook the Sausage: In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium heat. Remove the sausage from its casing and add it to the pot. Break it apart with a wooden spoon and cook until browned, about 5-7 minutes. Transfer the sausage to a plate and set aside.

    Sauté the Vegetables: In the same pot, add the remaining tablespoon of olive oil. Add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables start to soften. Add the bell pepper and continue cooking for another 3-4 minutes.

      Add Garlic and Herbs: Stir in the minced garlic, oregano, basil, and red pepper flakes (if using). Cook for an additional minute until fragrant.

        Combine Ingredients: Return the cooked sausage to the pot. Pour in the chicken broth, diced tomatoes (with their juices), and the cannellini beans. Stir well to combine.

          Simmer the Soup: Bring the soup to a gentle simmer. Reduce the heat to medium-low, cover the pot, and let it simmer for about 20-25 minutes to allow the flavors to meld.

            Add Greens: Shortly before serving, stir in the chopped kale or spinach. Cook for an additional 5 minutes until the greens are wilted and tender.

              Season and Serve: Taste the soup and season with salt and pepper as needed. Serve hot, topped with grated Parmesan cheese and fresh parsley if desired.
