Ingredients

1 pound ground beef (80/20 blend for best flavor)

1 medium onion, thinly sliced

2 tablespoons unsalted butter (for cooking)

4 slices rye bread

4 slices American cheese (or your cheese of choice)

Salt and pepper to taste

1 tablespoon Worcestershire sauce

Cooking oil (for frying)

Instructions

Prepare the onions: In a skillet, melt 1 tablespoon of butter over medium heat. Add the sliced onions, a pinch of salt, and sauté them until caramelized, about 15 minutes. Stir occasionally to prevent burning. Once golden brown, remove from the heat and set aside.

Form the patties: In a mixing bowl, combine the ground beef, Worcestershire sauce, salt, and pepper. Gently mix until just combined, being careful not to overwork the meat. Form the mixture into two equal-sized patties.

Cook the patties: In the same skillet, add a little cooking oil and heat over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until they reach your desired level of doneness. During the last minute of cooking on the second side, place a slice of cheese on each patty to melt.

Assemble the melts: While the patties are cooking, prepare another skillet or griddle over medium-low heat. Take the remaining tablespoon of butter and spread it on one side of each slice of rye bread. Place two slices butter-side down in the skillet.

Add the fillings: On each slice of bread, layer melted patty, caramelized onions, and top with another slice of bread, butter-side up.

Grill to perfection: Cook for about 3-4 minutes, or until the bottom slice is golden brown. Carefully flip the sandwiches and grill the other side until it is also golden brown and the cheese has fully melted (about 3-4 minutes more).

Serve hot: Remove from the skillet, slice in half if desired, and serve immediately with your favorite pickles or fries on the side.
