1 cup all-purpose flour

1 cup granulated sugar

2 teaspoons baking powder

½ teaspoon salt

2 tablespoons unsweetened cocoa powder

1 cup milk

2 tablespoons vegetable oil

1 teaspoon vanilla extract

1 cup brown sugar, packed

½ cup unsweetened cocoa powder (for the topping)

2 cups boiling water

Whipped cream or vanilla ice cream (for serving)

Instructions
 

Preheat your oven to 350°F (175°C). Grease an 8-inch square baking dish or a similar-sized ovenproof dish.

    In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and 2 tablespoons of cocoa powder until well combined.

      Pour in the milk, vegetable oil, and vanilla extract. Stir until the mixture is smooth and free of lumps.

        Spread the batter evenly into the prepared baking dish.

          In a separate bowl, mix the brown sugar and ½ cup cocoa powder together. Sprinkle this mixture over the batter in the baking dish.

            Carefully pour the boiling water over the top of the mixture in the baking dish. Do not stir. This will create a fudge-like sauce at the bottom of the cake while it bakes.

              Bake in the preheated oven for about 35–40 minutes, or until the cake has set on top and a toothpick inserted into the cake comes out mostly clean (some gooey bits are fine!).

                Remove from the oven and let it cool for 10 minutes. The pudding layer will be hot and bubbling.

                  Serve warm, spooning the cake out along with the hot fudge sauce underneath. Top with whipped cream or a scoop of vanilla ice cream if desired.
