1 lb (450g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

1/4 cup honey

1/4 cup soy sauce (low sodium preferred)

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon olive oil

1 tablespoon rice vinegar

1 teaspoon sesame oil

Salt and pepper, to taste

1/2 teaspoon red pepper flakes (optional, for a bit of heat)

2 green onions, finely sliced for garnish

Instructions
 

Prepare the Marinade: In a mixing bowl, whisk together honey, soy sauce, minced garlic, grated ginger, olive oil, rice vinegar, sesame oil, salt, pepper, and red pepper flakes (if using). This will be your marinade.

    Marinate the Chicken: Place the chicken pieces in a ziplock bag or a shallow dish. Pour the marinade over the chicken, ensuring it's well coated. Seal the bag or cover the dish, and refrigerate for at least 1 hour, or up to overnight for maximum flavor.

      Soak Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

        Preheat Grill: Preheat your grill or grill pan over medium-high heat.

          Assemble the Skewers: Thread the marinated chicken pieces onto the soaked skewers. Leave a little space between each piece for even cooking.

            Grill the Skewers: Place the skewers on the grill. Grill for about 6-8 minutes on each side, or until the chicken is cooked through and has nice grill marks. Baste with any remaining marinade during grilling for extra flavor. Ensure the internal temperature reaches 165°F (75°C).
