2 tablespoons olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

1 red bell pepper, diced

1 carrot, grated

1 zucchini, grated

2 cans (14 oz each) crushed tomatoes

1 tablespoon tomato paste

1 teaspoon sugar

1 teaspoon Italian seasoning (oregano, basil, thyme)

½ teaspoon red pepper flakes (adjust for spice preference)

1 tablespoon balsamic vinegar

Salt and pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese for serving

Heat the Oil: In a large saucepan, heat the olive oil over medium heat.

    Sauté the Veggies: Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

      Add the Peppers and Carrot: Incorporate the diced red bell pepper and grated carrot, cooking for about 3-4 minutes until softened.

        Mix in Zucchini: Add the grated zucchini and sauté for 2 more minutes.

          Combine Tomatoes and Paste: Pour in the crushed tomatoes and stir in the tomato paste until well combined.

            Season the Sauce: Add sugar, Italian seasoning, red pepper flakes, and balsamic vinegar. Season with salt and pepper to taste. Stir well to mix all ingredients.

              Simmer the Sauce: Bring the sauce to a gentle simmer, reduce the heat to low, and let it cook uncovered for about 30-45 minutes, stirring occasionally. This will help deepen the flavors and thicken the sauce.

                Taste and Adjust: Taste the sauce and adjust the seasoning if necessary. For extra depth, you can add more balsamic vinegar or a splash of red wine if desired.

                  Serve: Toss with your favorite prepared spaghetti or pasta. Garnish with fresh basil leaves and sprinkle with grated Parmesan cheese before serving.
