2 cups frozen orange juice concentrate (thawed)

2 cups frozen pineapple chunks

1 cup coconut milk (full-fat for creaminess)

1 teaspoon vanilla extract

1 tablespoon sugar or honey (optional, adjust based on sweetness preference)

Pinch of salt

Fresh mint leaves and orange wedges for garnish (optional)

In a high-powered blender, combine the thawed orange juice concentrate, frozen pineapple chunks, coconut milk, vanilla extract, sugar or honey (if using), and a pinch of salt.

    Blend on high speed until the mixture is smooth and creamy. You might need to stop the blender to scrape down the sides to ensure everything is well combined.

      Once blended, taste the mixture and adjust sweetness if necessary by adding more sugar or honey.

        Pour the mixture into an airtight container and freeze for about 1-2 hours until it is firm but still scoopable.
