Homemade No-Bake Twix Cheesecake

Ingredients
  

For the Crust:

1 ½ cups crushed shortbread cookies (such as Lorna Doone)

¼ cup granulated sugar

½ cup unsalted butter, melted

For the Cheesecake Filling:

16 oz cream cheese, softened

½ cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream

For the Twix Layer:

2 cups chopped Twix bars (about 4-5 bars)

½ cup caramel sauce

¼ cup chopped pecans (optional)

For the Chocolate Drizzle:

½ cup semi-sweet chocolate chips

2 tbsp coconut oil

Instructions
 

Prepare the Crust:

    - In a mixing bowl, combine the crushed shortbread cookies, granulated sugar, and melted butter. Mix until well combined.

      - Press the mixture into the bottom of a 9-inch springform pan, forming an even layer. Refrigerate while preparing the filling.

        Make the Cheesecake Filling:

          - In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy.

            - Add in the vanilla extract and mix until combined.

              - In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

                Assemble the Cheesecake:

                  - Spread half of the cheesecake filling over the crust, smoothing it into an even layer.

                    - Sprinkle half of the chopped Twix bars over the cheesecake filling, followed by drizzling half of the caramel sauce.

                      - Add the remaining cheesecake filling on top and smooth it out. Top with the remaining Twix pieces and drizzle with the remaining caramel sauce.

                        - Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours or until set (overnight is best).

                          Make the Chocolate Drizzle:

                            - In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between until melted and smooth.

                              - Once the cheesecake has set, remove it from the springform pan and drizzle the melted chocolate over the top.

                                Serve and Enjoy:

                                  - Slice into pieces and serve chilled. Optionally, sprinkle with chopped pecans for added texture and flavor.
